Remonce

This recipe makes approximately 2,5 dL remonce

Remonce is traditionally a mixture of butter, sugar and often spices or nuts. I like to add marzipan because I love the flavor, but I also give you the option not to. I also often use brown sugar because I'm a sucker for the deep taste of sweetness, BUT I've experimented and found that brown sugar, white sugar and cane sugar can replace each other 1:1 in this case.

Remonce can be used for an insane amount of things. In some cases, it's essential and in other cases, it can act as a delicious little component.

〰 Cinnamon rolls and swirls: Remonce is a classic filling for cinnamon rolls. It is spread evenly over the dough sheet, then rolled up and sliced before baking. The result is delicious, moist cinnamon rolls with the flavor of whatever you've added to the filling.

Danish Carnival Buns: Remonce can also be used as a filling for Danish Carnival Buns, giving a delicious, sweet taste and softness to the buns.

〰 Cakes: Some cakes, especially layered or filled cakes, can benefit from a remonce filling. Remonce can be used to add flavor and moistness to cake layers or filling between layers of cake.

〰 Pies: In some pie recipes, remonce can be used as a layer on the bottom of the pie before adding fruit or other fillings. This helps to absorb excess moisture and adds extra flavor.

Generally speaking, remonce can be used to add sweetness, flavor and moistness to different types of baked goods and desserts. It is a versatile ingredient that can be adapted to different tastes and preferences.

Ingredients

This recipe makes approximately 2,5 dL remonce


  • 75 g butter, room temperature

  • 75 g brown sugar/muscovado sugar/white sugar/cane sugar

  • 75 g grated marzipan

  • optional spices - cinnamon, cardamom, lemon zest/juice, lime

  • possibly chopped nuts


Method:

Mix all ingredients into a homogeneous mass.

Tips and storage

〰️ Skip the marzipan if you don't like it.

〰️ The shelf life of remonce depends on how it is stored and its ingredients. Generally speaking, remonce will keep in the fridge for up to 1-2 weeks if stored in an airtight container. If you want to extend the shelf life, you can also freeze the remonce. Once frozen, it will keep for several months.

〰️ It's important to ensure that the recipe is properly stored in an airtight container to prevent it from drying out or absorbing odors from other foods in the fridge. If signs of mold growth or unwanted odors appear, discard the recipe.
