This recipe combines the best elements of pancakes and cake for an impressive and tasty dessert. I'm not a layer cake person at all. I find that layer cake bases are boring and easily become either too wet from the other elements in the cake, or too dry. That's why this pancake cake is absolutely brilliant as a birthday cake. Also, birthday pancake cake is one of the longest words I know, which I'm also quite fascinated by.
But, having said all that, please just do yourself the favor of trying this amazingly easy and impressive cake. You will impress both yourself and your guests, I'm sure.
You can fill it with exactly YOUR favorite jam or fruit compote, and the fruits YOU like. The cake can therefore be styled and decorated and fine-tuned in all possible imaginable ways. Find some of my serving suggestions at the bottom of this page.

The Pancake Cake

a spring form
a springform pan
8 pancakes
A tray of strawberries.
A glass of strawberry-rhubarb jam.
A can of condensed milk boiled to caramel.
Boil the can for 4 hours and let it cool. Whisk with sea salt if necessary.
Also, a delicious vanilla cream:
half a liter of whipping cream
150 g cream cheese
50 g icing sugar
15 g. vanilla sugar
Possibly. the peel from a small organic lemon
Whip to a foam.
Method:
Take your spring form. Spread five pancakes around the edge so that they cover a bit of the bottom, but hang over the edge of the springform pan. Place a pancake in the bottom. Apply cream. And then jam, some fresh strawberries in suitable pieces and the caramel, which you have put on a piping bag, so that you can squirt it into a sausage (cut a hole that is approx. 3-5 mm large). It's easier than smearing it. You can also add the caramel in blobs. Place a pancake on top of this and repeat so that you get a total of three layers.
Finish by flapping the pancakes that hang over the edge over each other so that the cake is closed at the top.
Finally, you can decorate the cake however you like. I decorated with caramel dots and fresh strawberries.
Remove the ring from the springform pan and serve.
👀 Disclaimer: I hadn't distributed my cream evenly, so the third and last layer is just jam and caramel, and no cream. It worked fine, but ideally, you divide your cream into three equal parts, so you have for the three layers
Tips and storage:
〰️ The cake can easily be made the day before and left in the fridge in the spring form with film on it. EASY!

〰️ Flavor combination: The fresh taste of strawberries combined with the rich vanilla cream, the slightly acidic marmalade AND the sweet caramel creates an unforgettable cake/dessert experience.
〰️ Easy to make: Although it looks impressive, this cake is easy to make and does not require advanced baking skills.
〰️ It tastes like Kinder Milk Slice: I don't quite know how it happened, but the cream really gives a real Milk slice vibe if you add the lemon zest - and it's really delicious!
〰️ Variations: try with peanut butter and raspberry jam. Or Nutella and strawberries. It could also be delicious with lemon curd. You can really let your imagination and your taste buds run wild here.
〰️ Freeze: the cake is not suitable for freezing.
〰️ Storage: in the refrigerator. To prevent the cake from drying out, it should be stored in an airtight container or covered tightly with plastic wrap. The cake can stay fresh in the fridge for up to 2-3 days. However, the strawberries may start to release liquid after a few days, which can make the cake a little moist.
