Glutenfree Spinach Waffles
This recipe makes about 8 waffles

Ingredients
150 g GF oatmeal
120 g light GF mix, e.g. Doves Farm or Red Finax
100 g sorghum flour (or oatmeal)
0.50 tsp baking powder
150 g spinach, fresh or frozen
4 eggs M/L
4 dL milk (lactose free and plantbased will work too)
salt
a little melted butter or spray grease for the waffle iron.
Method
Blend everything together either in a food processor or with a hand blender.
Fry in a waffle iron and serve with your favorite topping.
These waffles are seriously delicious both as food waffles with savory toppings and as dessert waffles with Nutella, Peanut butter, jam or a dollop of ice cream.
I can top my spinach waffles with ANYTHING, but right now I'm particularly fond of cabbage, green pesto, cucumber, Parma ham and burrata.
Tips and storage
〰️ Use an airtight container to prevent the waffles from getting dry or absorbing other odors from the fridge.
〰️ If you stack the waffles, place baking paper between each waffle to prevent them from sticking together.
〰️ Thaw frozen waffles in the fridge overnight or at room temperature for a shorter period. You can also warm them directly from the freezer.
〰️ Preheat the oven to 180°C and heat the waffles for 5-10 minutes. This will help restore their crispiness. Or use a toaster to warm the waffles directly from the fridge or freezer. This is quick and easy.
〰️ Add different ingredients to the batter for variety, such as grated cheese, herbs or spices.
〰️ Serve spinach waffles with different toppings such as avocado, smoked salmon, sour cream, or as a base for poached eggs. Or sweet toppings such as Nutella, jam, chocolate spread or a dollop of ice cream.
〰️ Allow the waffles to cool completely on a baking rack before storing so they don't get moist in the container.
