Ingredients
170g gluten-free flour** I used Doves Farm Plain White
50 g sugar
Salt approx. 6 g.
A dash of vanilla sugar - approx. 15 g.
5 dL milk - plant milk works fine too.
3 eggs
0.5 dL GF light beer, can be omitted, meeen recommends using it.
Butter or other fat to fry in.
**all types of light gluten-free flour can be used. Either a mixture you bought, or a mixture of rice flour, sorghum and whole grain rice. Oatmeal is not good to use here.
Method
Mix all the ingredients, except beer, in a bowl - I use an immersion blender.
Add the beer and stir.
Bake the pancakes on a medium-hot pan in fat as desired. I use butter.
