Banana Bread w. Double Chocolate

This recipe makes approximately 10-12 servings

Banana bread, a new classic that seemed to be baked on a daily basis across the country during Corona.

But try it in a darker version with double the chocolate!

Often my bananas at home end up overripe and boring. Instead of throwing them out, I peel them and put them in a freezer bag. When there are enough frozen bananas, I can bake something delicious! I can also usually find overripe bananas for a good price at the supermarket where I usually shop.

Ingredients

This recipe makes approximately 10-12 servings


  • 150 g banana, preferably overripe

  • 60 ml unflavored oil, coconut or sunflower

  • 100 g skyr

  • 2 eggs M/L

  • 180 g oat flour, GF

  • 120 g brown sugar

  • 5 g baking powder

  • 5 g Xhantan Gum

  • salt

  • 50 g cocoa, unsweetened

  • 100 g chocolate chips/chocolate buttons

  • + 30 g for topping - I used some white and some dark.

  • A banana and the juice of half a lemon for topping (can be omitted).


Method

Preheat the oven to 180 degrees.Line a baking pan with baking paper. Mix all the wet ingredients together.Mix all the dry ingredients together.Fold the dry ingredients into the wet ingredients.Fold in 100g of chocolate chips. Pour the batter into the mold, sprinkle with 30g of chocolate chips, place a banana that you have split lengthwise on top and squeeze the juice from half a lemon over it. The lemon juice acts as sunscreen for the banana and prevents it from turning brown.Bake the banana bread at 180 degrees in a conventional oven for about 60 minutes. Wait until the cake is completely cold. This is the hardest part. If you cut the cake before it's completely cold, it will be so messy. Tasty, but messy.

Tips and storage:


〰️ Use your favorite chocolate: dark, light, white. White chocolate buttons on top for a caramelized taste.

〰️ The banana bread will stay fresh for 3-4 days in a tightly sealed container on the counter.

〰️ The banana bread can be frozen. Take it from the freezer and warm it before enjoying.

〰️ Try toasting a slice of banana bread on the toaster and eating it with peanut butter.
