5 ingredient Oat Bars

This oat bar is a really easy, quick and delicious cake with relatively few ingredients. I like to keep it simple to let the flavour and texture of the oats shine through. However, you can easily add all sorts of things like raisins, seeds or small pieces of chocolate.
The bar can be eaten plain, but for a little extra deliciousness and luxury, you can top it with a silky smooth chocolate ganache made with Gold chocolate, which has a lovely caramel flavour. I always use Callebaut, but if you can't find one, you can find ‘white chocolate buttons with caramel’ from Odense Marcipan in large supermarkets. Otherwise, you can use milk chocolate or white chocolate.
It can be served straight from the mould, cut directly at the coffee table, or it can be cut into small bites that are easy to grab with your fingers.

150 g butter
150 g brown sugar
250 g gluten-free oatmeal, preferably coarse
5 g baking powder
salt
Additional ingredients
The bar is delicious on its own, but can be served with a delicious golden chocolate ganache
200 g Gold Chocolate
1 dL of cream
Method of preparation
Preheat the oven to 200°C. Melt the butter, brown sugar and baking powder in a saucepan over low heat. Choose a pan large enough to also contain the oats. Add the oats. Place baking paper in a 21x21 cm tin and spread the mixture in an even layer in the tin.
Bake for 10-12 minutes - it should be golden.
Transfer the bar to a wire rack and let it cool completely.
Gold chocolate ganache
Heat the cream until steaming. Pour the cream over the chocolate and stir from the centre until the chocolate and cream come together. Stir until smooth and homogenous.
Spread the ganache on the bar and leave to cool for 1-2 hours before cutting.
Tips and storage:
〰️ Try adding a little cinnamon or cardamom to the batter.
〰️ You can also add 50 g coconut flour, some cocoa nibs or nuts.
〰️ If you want an EVEN easier version, you can add chocolate buttons to the batter and leave out the chocolate ganache.
〰️ If you want a healthier, more granola bar-like version, skip the chocolate ganache
〰️ Try adding a layer of finely chopped chocolate of choice on top of the hot bar just as it comes out of the oven. Just like that, you'll have bars with a thin layer of chocolate
